Chicken Lime Soup is a quick and easy recipe to make in the Instant Pot. With minimal prep, you can have this delicious meal in under 30 minutes. This is a hearty meal that is filling and super satisfying in all seasonings. The Jalapenos and green onion add a nice aroma to the broth along with the fresh lime juice that adds a nice tangy flavor. Add avocados, cheese, and sour cream before serving. Chicken Lime Soup
This is a hearty soup that is filling and super satisfying in all seasonings. Add avocados, cheese, and sour cream before serving.
Equipment
- Instant Pot or Electric Pressure Cooker
Ingredients
- 2 chicken breasts boneless and cut into cubes
- 2-3 tbsp olive oil
- 2 jalapenos seeds removed and diced
- 3-4 green onion chopped
- 2 tomatoes seeds removed
- 3/4 tsp salt or to taste
- 1/2 tsp black pepper or to taste
- 1 tsp cumin powder
- 1/4 tsp oregano
- 3-4 garlic cloves minced
- 6 cups water or low sodium broth
- 1-2 limes
- 1/2 cup cilantro
Garnish
- Sour cream
- cheese
- sliced avocado
Instructions
- Press saute and add olive oil. Then add jalapenos and green onion. Saute for a 1-2 minutes
- Add tomatoes and saute that for a few minutes.
- Add salt, pepper, cumin powder and oregano and saute that for a minute.
- Add garlic and saute that for a minute.
- Add chicken and cook until it's no longer pink. Note: The goal is to just saute the chicken not cook it completely at this point.
- Add 6 cups of water or broth.
- Pressure cook for 15 minutes and 3 mins of NPR.
- Release the remaining pressure. Open the lid when the pin drops.
- Add fresh lime juice of 1-2 limes, and cilantro.
- Top it with sour cream, avocado and cheese before serving.
