Lasagna- Instant Pot

Instant Pot Lasagna is so delicious and easy to make. If you have not tried this yet, do it asap. You will love it!
Prep Time 10 minutes
Cook Time 35 minutes
Broil 10 minutes
Total Time 55 minutes

Equipment

  • Instant Pot or Electric Pressure Cooker
  • Springform Pan ( I used 8 inch pan for 8 qt Instant Pot)

Ingredients
  

Cheese Filling

  • 1.5 cup ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 1 egg
  • 1/4 tsp salt or to taste
  • 1/4 tsp Italian seasoning
  • 1/4 tsp parsley

Marinara Sauce

  • 1 lb minced meat
  • 1 tbsp garlic paste or 4 minced garlic cloves
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp cayenne pepper
  • 1/2 tsp onion powder
  • 1 Jar marinara Sauce (24 oz)
  • 1/2 cup water

Instructions
 

Prepare Cheese Filling

  • In a bowl, add and mix ingredients listed under the cheese filling section and set aside. (ingredients above)

Sauce Preparation

  • Add 1 tbsp of olive oil and add 1 lb of minced meat.
  • Add 1 tbs of garlic paste or 4 minced garlic cloves
  • Cook the meat until its no longer pink.
  • Add black pepper, Italian seasoning, onion powder (1/2 tsp each) and 1/4 tsp cayenne pepper. (optional)
  • Cook the spices with the meat until water dries up.
  • Add 1 Jar of Marinara sauce or pasta sauce. (24 oz)
  • Add 1/4 to 1/2 cup of water. This step is optional. (See footnotes below)
  • Let it simmer for a few minutes.

Layering

  • Take a springform pan (one that fits your instant pot). I used 8-inch pan for 8 qt
  • Brush some olive oil on the pan. (1 tbsp)
  • Add a layer of no boil lasgana sheets. You may have to break it up in pieces for lasagna to fit. (See video example below)
  • Add a layer of marinara sauce. Important to cover the noodles.
  • Add a layer of the prepared cheese filling. (you may sprinkle some extra cheese)
  • Repeat the layers one more time, lasagna sheets, marinara sauce, cheese filling.
  • Add the final layer of lasagna sheet and add a final layer of Marinara sauce.
  • Sprinkle some parmesan cheese and mozzarella cheese to your liking.
  • Loosely cover the pan with foil.. make sure the pan does not stick to the cheese. (See notes below)

Pressure Cook

  • Add 1 cup of water in the instant pot.
  • Place the trivet inside and place the springform pan on the trivet.
  • Cover the lid and seal. Pressure Cook on 25 minutes high and 15 minutes NPR.
  • Release the rest of the pressure (if any) and open the lid.

Broil

  • Uncover the foil from the springform pan.
  • Note: if the cheese sticks on the foil… no worries… add more cheese.
  • Broil the lasagna for 10 mins in the oven.
  • After broiling is done, let the pan cool before removing the sides of the springform pan. Enjoy!

Notes

Food Notes:
– 1/2 cup of water in the marinara sauce is optional. I add it for two reasons:
1) The marinara sauce is too thick and water is needed to simmer the sauce.
2) No-boil lasagna needs moisture to cook properly… this will slightly thin out the sauce for the noodles.
– I am using an 8qt instant pot. For this instant pot, I used an 8-inch springform pan. Use one that fits your instant pot.
– Loosely cover the pan with the foil (meaning not too close to the cheese). Dont worry if cheese sticks to the foil after pressure cooking. You can always add more cheese before broiling.
